Tuesdays are our crazy busy weeknight, so we have deemed it CROCKPOT TUESDAY!! This is mostly because I am home to put the stuff in the crockpot in the morning and Matt is there in the evening to feed our people. On Monday, the girls said they wanted Pizza and I said, "Super! We are having tomato basil soup tomorrow and that tastes just. like. pizza!!" They gave me weird looks and walked away:/

Did a couple of things different...
1. Used an Immersion blender to make it all smooth (aka: hide all of the wonderful veggies from my little people). I used this right in the crockpot while the soup was still hot. I little more risky, but faster. Don't burn yourself, ouch!! This is THE BEST investment you can make for soups, just saying.
2. Made a sandwich to go with it. Hubby thinks it weird when we have soup for dinner, so there always has to be a sandwich along with it. We love "melt sandwiches," specifically Panini's. I bought this pan a couple of years ago and its still in super-duper condition! We even put ours in the dishwasher (oops!)...takes a little of the outer finish off, but its worth the 5 minutes of washing it saves me every time. NOT into the press machines....who wants to clean that? Our grocery store sells "Panini bread" but really anything will work. Spread a little pesto on it, a little rotisserie chicken and some shredded 6 cheese Italian cheese. Yum! Used a little bit of butter on the pan to crisp the bread and DONE.

3. Oyster Crackers...cause honestly, if I don't have any on hand it is worthless to make soup...NO ONE will eat it, true story! Spend the extra pennies for the premium crackers, you won't be sorry!!
4. Make the kiddos grilled cheese or cheese quesadilla to go with it. I realize that is redundant since there is lotsa cheese in the soup, but its my kids' favorite food, so if they eat the soup (with all the hidden veggies) its a win-win for everybody!
